Cauliflower Alfredo Sauce

Alfredo, but make it lighter (and sneak in veggies!). This creamy cauliflower alfredo sauce tastes just as rich and cheesy, but with extra fiber, nutrients, and a little less heaviness!
Servings: 8
Prep Time: 10 minutes
Cook Time: 10 minutes
Ingredients:
2 tsp Garlic Powder
2 cups Riced Cauliflower, frozen
1 cup Chicken Broth
¼ tsp Black Pepper
2 tbsp Cornstarch
½ tsp Italian Season
½ tsp Salt
1 tbsp Olive Oil
¼ cup Plain Greek Yogurt
1 cup Parmesan Cheese, shredded
½ cup Fair Life Milk, 2%
Directions:
Steam cauliflower rice per directions on package.
In a blender, combine cauliflower rice, broth, olive oil, and garlic. Blend until smooth and creamy.
Pour mixture into a saucepan. Whisk in cornstarch, milk, yogurt, Italian seasoning, salt, and pepper.
Simmer on low heat until thickened.
Stir in Parmesan just before serving.
