Cauliflower Alfredo Sauce

Alfredo, but make it lighter (and sneak in veggies!). This creamy cauliflower alfredo sauce tastes just as rich and cheesy, but with extra fiber, nutrients, and a little less heaviness!


Servings: 8

Prep Time: 10 minutes

Cook Time: 10 minutes


Ingredients:

  • 2 tsp Garlic Powder

  • 2 cups Riced Cauliflower, frozen

  • 1 cup Chicken Broth

  • ¼ tsp Black Pepper

  • 2 tbsp Cornstarch

  • ½ tsp Italian Season

  • ½ tsp Salt

  • 1 tbsp Olive Oil

  • ¼ cup Plain Greek Yogurt

  • 1 cup Parmesan Cheese, shredded

  • ½ cup Fair Life Milk, 2%


Directions:

  1. Steam cauliflower rice per directions on package.

  2. In a blender, combine cauliflower rice, broth, olive oil, and garlic. Blend until smooth and creamy.

  3. Pour mixture into a saucepan. Whisk in cornstarch, milk, yogurt, Italian seasoning, salt, and pepper.

  4. Simmer on low heat until thickened.

  5. Stir in Parmesan just before serving.
