Berry obsessed! 20g protein and 6g fiber! This protein-packed baked beauty is made with cottage cheese, naturally sweetened, and rich in fiber and antioxidants from the blueberries and raspberries, AND it is boosted with chia seeds for extra fiber. Breakfast that tastes like dessert, but actually loves your gut!


Serves: 4

Prep Time: 10 minutes

Cook Time: 30 minutes


Ingredients:

  • 2 cups Cottage Cheese

  • 3 Eggs, large

  • 3/4 cup Almond Flour

  • 1/4 cup Oat Flour

  • 1/4 cup Monk Fruit Sweetener

  • 1 tbsp Chia Seeds

  • 1 tsp Vanilla Extract

  • 1 tsp Baking Powder

  • 3 tbsp Corn Starch

  • 1 1/2 cup Mixed Berries


Directions:

  1. Preheat oven to 325 degrees and grease an 8x8-inch baking dish.

  2. Blend cottage cheese and eggs in blender until smooth and creamy.

  3. Transfer to a bowl and mix in the almond flour, oat flour, sweetener, vanilla, chia seeds, corn starch, and baking powder.

  4. Fold in the berries.

  5. Pour batter into the baking dish.

  6. Bake for 30 minutes until golden and center is set.

  7. Let cool for 20-30 minutes before slicing.
