This Breakfast Bowl has it all! Spinach, pico, butternut squash, cheese, and hashbrowns! Nourishing, filling, and perfect for meal prep. Make once, enjoy all week!!


Servings: 6

Prep Time: 10 minutes

Cook Time: 40-50 minutes


Ingredients:

  • 1 lb Turkey Breakfast Sausage

  • 1 1/2 cup Cheddar Cheese, shredded

  • 12 Eggs

  • 4 cups Baby Spinach

  • 2 cups Pico

  • 4 cups Butternut Squash, cubed

  • 2 cups Hashbrowns, frozen

  • Salt and Pepper to taste


Directions:

  1. In a large skillet over medium-high heat, cook turkey sausage.

  2. Divide all ingredients, except the cheese, equally into 6 oven safe meal prep dishes (the dishes need to be able to hold 4 cups)

  3. Give them a little stir and top with cheese before putting them into the oven.

  4. Bake at 350 for 40-50 minutes or until eggs are cooked.


Note:

  1. I used fresh butternut squash that was already cubed. I steamed it in the bag using the microwave. You can also use frozen, just steam beforehand.

  2. I used frozen hashbrowns for convenience, but you can use fresh potatoes, just make sure to cook them beforehand.
