This Black Bean and Rice with Sausage Skillet is hearty, flavorful, and packed with nutrition-- 25g protein plus 11g fiber per serving! Quick, balanced, and made in just ONE pan! It's perfect for meal prep or for a busy weeknight!

Ingredients:
1 tbsp Olive Oil
12 oz Chicken Sausage (I used Aidells), cut
1 purple onion, diced
2 Bell Peppers, diced
1 tsp Garlic Powder
1 tsp Ground Cumin
1 tsp Paprika
1 tsp Oregano
1/2 tsp Chili Powder
1 tsp Pepper
1 tsp Salt
1 cup Brown Rice, uncooked
15 oz Black Beans, canned (drained and rinsed)
2 cups Chicken Bone Broth
1/2 cup Cheddar Cheese, shredded
1/4 cup Cilantro, fresh
Directions:
Brown sausage over medium heat in large skillet with olive oil. Once browned, remove from skillet and set aside
In the same skillet, add onion and bell pepper. Cook until softened, about 4 minutes.
Stir in all spices, add rice, black beans, broth, and sausage back to skillet.
Bring to a boil, reduce heat, cover and simmer for 20 minutes or until rice is fully cooked.
Fluff then top with cheese and garnish with fresh cilantro if desired.
