Mexican Casserole (very kid friendly)

Servings: 8

Prep Time: 10 minutes

Cook Time: 30 minutes


Ingredients:

1 lb Ground Turkey

1 packet Taco Seasoning

I6 oz Fat Free Refried Beans

15 oz Red Enchilada Sauce

1 cup Corn, frozen

12 Yellow Corn Tortillas, thin

1 1/2 cup Mexican Cheese, 2%


Directions:

  1. In large skillet, brown turkey until cooked through.

  2. Add beans and corn and combine.

  3. Grease a 9x13 baking dish and put 1/4 cup of enchilada sauce on the bottom.

  4. Start layering: place corn tortillas, then meat mixture, some enchilada sauce, cheese, and repeat until out of meat mixture. I used 12 tortillas total, but this could vary.

  5. Bake at 350, covered for 30 minutes.
