Healthy chocolate cake that doesn't taste healthy! 22g protein plus 6g fiber in every serving! It's fudge'y, satisfying, AND nourishing! Dessert should fuel you and taste amazing and this cake does just that!


Servings: 4

Prep Time: 10 minutes

Cook Time: 25 minutes


Ingredients:

  • 2 cups Cottage Cheese, 4%

  • 3 Eggs, large

  • ¾ cup Almond Flour

  • ⅓ cup Monk Fruit Sweetener

  • 1 tbsp Chia Seeds

  • 2 tbsp Corn Starch

  • 1 tsp Baking Powder

  • ¼ cup Cocoa Powder

  • 1 tsp Vanilla Extract

  • 1 tbsp Dark Chocolate Baking Chips


Directions:

  1. Preheat oven to 350 degrees and grease an 8x8 baking dish or four individual baking dishes that hold 2 cups.

  2. Blend cottage cheese and eggs until creamy.

  3. Transfer to a bowl and add almond flour, sweetener, vanilla, baking powder, corn starch, cocoa powder, and chia seeds. Combine.

  4. Pour batter into prepared baking dish and spread evenly.

  5. Top with chocolate chips.

  6. Bake 25 minutes, until center is set.
