Satisfy your cravings with these SO FUDGE'Y 100-calorie brownies! With 5g protein and 3g fiber in each brownie, they are the perfect balance of indulgence and nourishment.

Cook Time: 20 minutes


Ingredients:

  • 2 large eggs

  • ¼ cup monk fruit sweetener

  • 3 tbsp brewed coffee

  • 1 cup almond flour

  • 2 tbsp ground flaxseed

  • ½ tsp baking soda

  • ½ cup unsweetened cocoa powder

  • ½ cup dark chocolate chips

  • 1 tsp vanilla extract

  • ½ cup Greek yogurt


Directions:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.

  2. In a large bowl, whisk together eggs, monk fruit sweetener, coffee, Greek yogurt, and vanilla until smooth.

  3. Add almond flour, cocoa powder, flaxseed, and baking soda. Mix until combined (don’t overmix).

  4. Fold in chocolate chips.

  5. Spread batter into the prepared pan.

  6. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs.

  7. Let cool before slicing — they’ll firm up as they cool.
