Harvest Sweet Potato

This stuffed sweet potato is comforting, high-protein, and full of fall vibes. Ground turkey, tart cranberries, creamy feta, and a drizzle of Mike's Hot Honey to tie it all together! With 27g protein and 9g fiber, it is perfect for meal prep or a festive weeknight dinner!


Servings: 4

Prep Time: 5 minutes

Cook Time: 10 minutes


Ingredients:

  • 4 Sweet Potatoes, medium, 5"

  • 1 tbsp Olive Oil

  • 1/2 Yellow Onion, diced

  • 1 lb Ground Turkey, 93%

  • 1 tsp Garlic Powder

  • 1 tsp Sage

  • 1 tsp Thyme

  • 1 tsp Salt

  • 1 tsp Black Pepper

  • 1/2 cup Feta Cheese

  • 1/2 cup Cranberries, dried

  • 2 tbsp Mike's Hot Honey


Directions:

  1. Wash sweet potatoes and poke holes in them using a knife or fork. Microwave for 10 minutes, turning them at the halfway mark. Remove when soft and set aside.

  2. Add 1 tbsp olive oil into large skillet. Over medium heat, cook diced onion until tender.

  3. In the same skillet add ground turkey, garlic, sage, thyme, black pepper, salt and cook until cooked through.

  4. Slice potatoes down the middle, creating a bowl. Divide meat evenly into the 4 potatoes.

  5. Top each potato with Feta and cranberries.

  6. Drizzle with Mike's Hot Honey and serve!
