Peanut Butter Cookies

These peanut butter cookies are loaded with protein, fiber, AND omega-3s-- and still taste like the classic PB cookies you grew up with!


Servings: 12

Prep Time: 10 minutes

Cook Time: 10-12 minutes


Ingredients:

  • ¾ cup peanut butter

  • ¼ cup powdered peanut butter (mixed with 2 tbsp water)

  • ¼ cup Monk Fruit Sweetener 

  • 1 Egg

  • 2 tbsp Ground Flaxseed 

  • 4 tbsp Almond Flour

  • 3 tbsp Hemp Hearts

  • 1 tsp Baking Powder

  • ½ tsp Vanilla Extract 

  • ¼ tsp Salt


Directions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large bowl, stir together peanut butter, reconstituted PB2, monk fruit sweetener, egg, flaxseed, almond flour, baking soda, vanilla, and salt until fully combined.

  3. Fold in hemp hearts.

  4. Roll dough into 1-1.5 inch balls, place on baking sheet, and press lightly with a fork in a criss-cross pattern.

  5. Bake 8-10 minutes until edges are set (centers will look soft).

  6. Let cool on pan for 5 minutes before moving to a wire rack to firm up.
