Get ready for pumpkin spice season like never before! This protein-packed, fiber-rich cake is the perfect cozy treat with all the warm fall flavors and a fluffy texture- no sugar crash included! With 21g protein and 4g fiber, it's the perfect breakfast, snack, or dessert!

Cook Time: 25 minutes


Ingredients:

  • 2 cups Cottage Cheese, 4%

  • 2 Eggs, large

  • ¼ cup Pumpkin Puree

  • 1 cup Almond Flour

  • ⅓ cup Monk fruit Sweetener

  • 1 tbsp Chia Seeds

  • 2 tbsp Corn Starch

  • 1 tsp Baking Powder

  • 1 tsp Vanilla Extract

  • 2 ½ tsp Pumpkin Spice

  • 1 tbsp White Chocolate Baking Chips


Directions:

  1. Preheat oven to 350 degrees and grease an 8x8 baking dish or four individual baking dishes that hold 2 cups.

  2. Blend cottage cheese and eggs until creamy.

  3. Transfer to a bowl and mix in almond flour, sweetener, vanilla, baking powder, corn starch,  chia seeds, pumpkin spice, and pumpkin puree.

  4. Pour batter into prepared baking dish and spread evenly.

  5. Top with white chocolate chips or whatever you like (the macros below include white chocolate chips).

  6. Bake 25 minutes, until center is set.
