Chicken Gnocchi Skillet

Creamy, cozy, and packed with goodness! This one-skillet chicken gnocchi is loaded with veggies, has 35g protein and portions that don't skimp. Easy to make, hard not to love!!
Servings: 4
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients:
2 tbsp Olive Oil
1 lb Chicken Breast, diced
1/2 Yellow Onion, diced
1 tsp Garlic Powder
1 tsp Oregano
1 tsp Black Pepper
1 tsp Salt
1 Zucchini, chopped
2 cups Baby Spinach
12 oz Gnocchi
1 cup Fairlife Whole Milk
1 cup Chicken Broth
1/2 cup Parmesan Cheese, grated
Directions:
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add diced chicken, garlic powder, oregano, black pepper, and salt. Cook until chicken is cooked through. Remove chicken from skillet and set aside.
In the same skillet add remaining tbsp of olive oil and zucchini and cook until tender. Add spinach and cook for 2 minutes.
Add chicken broth and gnocchi. Cook for about 4 minutes, stirring occasionally, until the gnocchi gets tender.
Reduce heat to medium-low and add milk. Stir gently to combine and let simmer for 5 minutes until the sauce starts to thicken.
Add the cooked chicken and parmesan to the skillet. Stir until cheese it mixed in and chicken is heated through.
