One Skillet Broccoli, Chicken & Rice Casserole

Nourishing and packed with flavor! This Broccoli, Chicken & Rice Casserole is the ultimate weeknight comfort meal. High in protein, full of fiber-rich veggies, and cheesy in all the best ways. Perfect for meal prep or a easy family dinner!

Ingredients:

  • 1 1/2 tbsp Olive Oil

  • 12 oz Broccoli Florets, fresh

  • 1 lb Ground Chicken

  • 2 tbsp Ranch Dressing

  • 1 cup Brown Rice, uncooked

  • 1 cup Cheddar Cheese, shredded

  • 2 1/2 cups Chicken Broth

  • 1 tsp Salt

  • 1 tsp Black Pepper


Directions:

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add broccoli and cook for 4 minutes until it begins to char around the edges. Transfer to a bowl and set aside.

  2. Add the remaining olive oil to the skillet with the ground chicken with the ranch dressing, salt and pepper. Cook until chicken is cooked through.

  3. Add the rice to the skillet and 1/2 cup of chicken broth to deglaze the skillet. Then add the remaining broth.

  4. Bring to a boil, cover, and reduce heat to low. Cook for 15 minutes or until rice is cooked and all of the liquid is absorbed. Stir occasionally to make sure nothing is sticking to the skillet.

  5. Once rice is cooked, turn heat off and add half of the cheese and stir. Fold in the broccoli. Add the remaining cheese on top and cover for 3 minutes to melt the cheese. Serve!
