Turkey & Cheesy Potato Casserole

Comfort food, but made balanced! This one pan turkey and cheesy potato casserole is protein-packed, cheesy and cozy-- plus I snuck in some extra nutrients so it's not just delicious, it's good for you too! Perfect for meal prep or a family dinner.

Ingredients:
1 tbsp Olive Oil
1 lb Ground Turkey, 93%
1 Onion, diced
1 Zucchini, diced
1 tsp Garlic
1 tsp Black Pepper
1 tsp Paprika
1 tsp Oregano
1 tsp Salt
1/2 cup Beef Broth
1/2 cup Almond Milk
445g Gold Potatoes, cubed
1 1/2 cup Sharp Cheddar Cheese, shredded
1 tbsp Parsley, fresh
Directions:
Heat the olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned.
Add the onion and zucchini to the skillet. Cook for 3-4 minutes, or until the onion is softened and fragrant.
Add the potatoes to the skillet and season with salt, pepper, garlic, paprika, and dried oregano. Stir to combine.
Pour in the beef broth and almond milk and cover the skillet.
Reduce the heat to low and cook for 20-25 minutes, or until the potatoes are tender and the liquid has mostly absorbed.
Sprinkle the shredded cheddar cheese over the turkey and potatoes. Cover and cook for 2-3 minutes, or until the cheese has melted.
Garnish with fresh parsley.
