Turkey & Sweet Potato Casserole

Delicious food that fuels your body! This turkey & sweet potato casserole packs 35g protein for sustained energy and 7g fiber for a healthy gut. Hearty, satisfying, and seriously tasty-- eat well without sacrificing flavor! Perfect for meal prep or a quick family dinner.

Cook Time: 20 minutes


Ingredients:

  • 1 lb Ground Turkey, 93%

  • 2 Sweet Potatoes, cubed

  • 5 tbsp Olive Oil

  • 1 ½ tsp Garlic Powder

  • 4 tsp Rosemary, dried

  • 1 tsp Salt

  • ½ tsp Black Pepper

  • 15 oz Black Beans, drained and rinsed

  • 1 cup Mozzarella Cheese


Directions:

  1. Preheat oven to 400 degrees.

  2. Toss cubed sweet potatoes with 2 tbsp olive oil. Spread on backing sheet and roast for 25 minutes, flipping halfway.

  3. In skillet, with 1 tbsp olive oil, cook ground turkey over medium heat until cooked through. Add garlic powder, rosemary, salt and pepper. Stir to combine.

  4. In casserole dish, layer roasted sweet potatoes, cooked turkey, and black beans. Drizzle remaining 2 tbsp olive oil on top.

  5. Sprinkle top with shredded mozzarella. Bake for 15 minutes or until cheese is melted and bubbly.
